Lovers’ Letter
A Nyonya Valentine's, Curated by Chef Min
This Valentine’s, embark on an intimate three-course odyssey with Chef Min, translating the vibrant soul of Penang, Malaysia, into a lovely shared culinary language. This is a story told through spice, land, sea and sweetness—designed to awaken every sense.
At its heart is our interactive Popiah starter, inspired by the ritual of exchanging love letters. We invite you to wrap one for your beloved, turning the table into a canvas for shared creation. Like a heartfelt letter, it requires intention, patience, and care. No two are ever alike—just like love.
The Main presents a Penang classic, Ayam Masak Merah: chicken in a rich, creamy tomato sauce, warmed by subtle spices. Chef Min’s twist mirrors a couple's shared journey—a celebration of cherished memories.
It culminates in the final note: a "scroll in a rose garden" dessert. Find your moment under Brixton Blend stars.

How to Brew:
How to Brew:
- Water Preparation: Heat fresh, filtered water to around 80°C (approximately 175°F). Avoid using boiling water as it can scorch the delicate leaves and result in a bitter taste.
- Tea Measurement: Measure out approximately 1 teaspoon of Mountain Mi'jing tea leaves per 240 ml of water. Adjust the amount according to your taste preferences.
- Tea Infusion: Place the measured tea leaves into a teapot or infuser. Pour the hot water over the leaves, ensuring they are fully submerged.
- Steeping Time: Allow the tea to steep for about 2-3 minutes. Adjust the steeping time based on your desired strength. Longer steeping times will result in a stronger flavor profile.
- Enjoy: Once the steeping time is complete, carefully remove the tea leaves or strain the infusion into a cup. Take a moment to appreciate the aroma before indulging in the smooth and refreshing taste of Mountain Mi'jing tea.
- Optional Enhancements: For a unique twist, consider adding a slice of lemon or a sprig of mint to complement the tea's natural flavours.
